Can I have a publisher in a MCS server and subscriber in virtual environment on UCS server?
Sure can, but you must follow "common sense" rules from the design guide, e.g. don't have Sub bigger than Pub or Sec bigger than Pri.
Should be somewhere in the UC design guide at www.cisco.com/go/ucsrnd
while you're at it, you can mix UCS, HP, IBM, virtual, bare-metal in the same cluster as long as the app instances are happy per above "common sens"e rules.
